Once FTTC is activated, do I have to wait for the first ten days on training period before can ask the isp to request to have FTTC interleaving to be switched off for gaming online?

The ISP has no control over interleaving. Not even a request to Openreach.

My broadband basic info/help site - www.robertos.me.uk | Domains,site and mail hosting - Tsohost.
Connection - Plusnet UnLim Fibre (FTTC). Sync ~ 59.4/14.4Mbps @ 600m. - BQM

ISP has three options available

None of which allow them to turn off interleaving the DLM will apply interleave if it thinks it is necessary to provide a stable platform for streaming and consistent latency across the link. A gamer will understand the a consistent ping is better than one that is 8ms one second and 44ms the next.
