When I look at my phone number on the phone app, or in the phone settings or message settings, it shows the old number, from before I ported my number in, if I text or ring from the phone it shows the correct number, and sends the correct number as caller I.D, but the old number is still showing in settings, but I can't find a way to change them.

I suspect you just need to reset the Network Settings

Thanks, tried that, even tried full reset and restore from backup. Only noticed cos was hunting around as 3G has stopped working.

Go to settings and scroll down to phone.. you can change the number there at the top...

It's greyed out and can't be changed, have been onto the network provider, and they say it can't be changed on iOS 5.1, and apple are working on it.

This might be set on the SIM card. Some of the network providers can send through a "SIM update" to change this but otherwise, you'll not be able to do it from the handset.
My Vodafone SIM isn't hardset and the option to change it available in Settings > Phone (running version 5.1 (9B179)

Rubbish - its the network's SIM card that controls this.
Which network? My T-mobile and my friends Orange are editable, and my work Vodafone SIM is editable if I put it into my iPhone. All on iOS 5.1
