Anyone had this done? How was the process from your point of view, were they able to deliver both simultaneously or was there some delay between the provision of the POTS and the FTTC?

For me "it just worked"
I had a new line and FTTC installed on behalf of Plusnet. In reality, the new line was restarting a ceased line and moving the master socket so it was perhaps simpler than most new line provisions...
The new master socket was installed and the old cable chopped and extended, tested for voice and VDSL in less than an hour. The jumpering at the cabinet had clearly happened prior to BTO visiting me.

Round this way, if skilled, the engineer will just have both jobs pinned to them, fit the line on the first job, then fit the fibre at the same time on the second.

no as I escalated to get a faster install after given almost 2 months installation date.
the sim install requires a longer engineer slot which leads to a likely later date.

I had a brand new line (new dropwire and new master) and Infinity installed simultaneously last year. It all went very smoothly, which surprised me since my previous experience with OR has not been good. It took the engineers (two plus a cherry picker) around an hour to complete.

Sounds like for the most part it won't be a problem.
I know when the local cabinet is due to go live so I may order the POTS in advance then have the FTTC enabled when the cabinet is live.

For you to mean Post Office Telephone System would be anachronistic, and if you order a line from the Post Office it might even be a Vodafone TalkTalk one by now  . (Probably not).

I reckon you meant PSTN but your incipient dementia got there first  .

I have spent a lot of time working with Americans, you pick up some of the acronyms. POTS works worldwide though.
Anyway I have my plan in mind now.
As far as dementia goes trust me you've no idea. I make the memory and cognitive skills of a dementia patient look positively excellent sometimes.
