Do any fibre ultrafast broadband ISPs supply wired only (not WiFi) routers? It seems a waste to get a WiFi router when you don’t want one?
Typical the routers are free, and generally you can turn wifi off if you don't wish to use it. Most people want wifi which is likely why most domestic routers come with it.
I'm not sure wired only routers exist at the price point where ISPs would bundle them. Most of the SOCs that the devices are built out of include Wi-Fi, so vendors just need to put the RF hardware on the board and add a couple of antennas and they've got a Wi-Fi device.
Turn the radios off if you want to save a bit of power, but you won't save money trying to find a device that doesn't have Wi-Fi.

Surely if the OP is happy to pay higher prices for Ultrafast broadband then they can afford the cost of wifi. May be its all down to a conspiracy theory
I think YouFibre will let you return the Eero router if its not wanted (you need to return it when you leave anyway). Although I think they like you to keep the Eero as they can use it to do speedtests
There must be very few people these days that don't use wi-fi, even if it is just for a smartphone. I do tend to use Ethernet as much as I can, even my printer is on Ethernet, but there is a fair bit that is Wi-fi only.
Just turn wi-fi off if you don't need it.
