EE fibre and 3rd party email

Can I use GMX IMAP email with EE fibre broadband?

Also can I use an Apple Tme capsule instead if the supplied router?

You can use any email as long as it doesn't use Port 25 SMTP.

Yes you can use your Apple Time Capsule router, it won�t replace the EE fibre router which has the inbuilt VDSL modem required, you just connect your Apple Time Capsule to the supplied EE Bright Box 2 router.

Setup Instructions, your Apple Time Capsule will be this BT Home Hub 5 router.

If you are currently using it with BT Infinity and White Openreach Modem then yes, you will just need to enter PPPoE username and password which you should be able to get from EE!
