youll be happy with that we've got similar specs ive got the i5 2500 dident bother spending the extra on the K because i dont ever over clock i mean cumon who needs more than 3.30GHz anyway with a 3.70GHz turbo boost lol, plus the turbo boost can be manipulated to 5GHz on stock cooler if needed for some strange reason even on the normal 2500.
ive also got the Asus P8H67-m Pro the only majour diff between that and the Asus P8P67 LE is that mine has the use of the sandy bridge GPU were as yours wont but youve chose the ATI card so thats wont matter anyway. I can honestly say you shouldn't have any probs with that either good choice.
Im not an ATI fan my self ive always had intel/nvidia combos but as others say each to there own saving up for a new card my self i reused the 8800GTS and it slows things down a tad the intel 2000 built into the sandy bridge seams to proform a lot better lol but it takes ram so i stick with the 8800GTS for now lol.
i only went for a 250GB sata 3 HDD because ive also got an SSD and already had a 1TB drive anyway but i will say u do notice a speed increase although nothing near 6Gb/s its more around the 4.5 for me.
bottom line go for it i think you will be pleased with the end product
