Can I use all 4 pairs in a Cat5e cable?

As I understand it a normal network connection between a router - via a wall plate - and a faceplate in another room only uses 2 of the 4 pairs in the Cat5e cable.

Can I use the other two pairs and get double socket faceplate to double socket faceplate connection with only the one cable?

Only 2 pairs are "used" when doing sub-gigabit ethernet in the sense that the signal is only sent through 2 pairs, but the 4 pairs should all be connected so that they are available if and when they need to be used.
