I know nothing really about Sky, so maybe you should browse that forum on this site. You could also ask about gaming on FTTC on the Plusnet one.
Note that you will find a lot of threads/posts about a bug Plusnet had in their ordering system following bringing in the new products. People ordered 80/20 but it went out to Openreach as 40/10. So they got unlimited, but not at the expected speed if that was over 40Mbps.
They say the bug has been fixed. People it happened to get corrected, but there are still some orders in the pipeline so may be some more posts about it. You would be OK in this respect.
