Zen tell me that if I wish to migrate to them from TalkTalk fibre they will first have to switch me to ADSL and then place an order for fibre, Plusnet tell me they can switch directly to their fibre product without going back to ADSL. Why the difference?

Risk management decisions taken by the two providers most likely.
Zen may feel coming from full LLU phone and FTTC to them is less risky if they go via the ADSL for a few weeks
PlusNet may feel the opposite and confident in the full LLU to SMPF shift process.
The Zen route does carry a risk that if your cabinet is close to capacity that you could end up with no FTTC port to return to after a few weeks.
Cannot say I've seen enough people coming off of TalkTalk or Sky FTTC to assess which is best route in terms of ensuring connection up time.

The idea of going back to ADSL for a few weeks(!) is definitely not appealing.

Just for clarification ... I thought that a fully unbundled LLU line, like the one I have with TalkTalk, does not use a MAC for migration to a new ISP i.e. is it the case that TalkTalk simply won't be able to produce a MAC?

That would be SMPF and the usual MAC migration path would be taken until June 20th

Can you please PM me your details and ill look into this for you because we should be able to move you from
TT FTTC to Zen FTTC as long as TT provide you with a Mac code. As said the op is MPF and not SMPF therefore not part of the MAC system process, FTTC will be Openreach GEA & not BTW WBMC and the pstn will be TT MPF and not BTWRL3
So would be move PSTN first then order FTTC , or if possible a sim provide as eu doesn't want ADSL
