Can I use this (or similar) with Zen's FTTP and plug one directly into the ONT or will I still need a router between the ONT and the TP system?

Manuals are available under the support tab of the page you linked. In general, you will only ever use exactly 1 router on a home setup unless you have a reason to do something different and have an understanding of what you are trying to achieve.

The manual is somewhat deficient in that it does not clarify that the ONT is functionally equivalent to a modem. So, yes, you connect the first one to the ONT in Router mode and the other two in Access Point mode.
