I saw that but I thought it couldn't be right because it's so minimalistic. Bear in mind I've never used Fibre before. When I put the router in EWAN/PPoE mode, I have these options. Do any of them matter?

NAT you need to enable. Service name you leave blank. Obtain DNS you should either have enabled automatic, or entered your preferred replacement. Using non ISP DNS can make some sites slow (e.g. those that use Content Distribution Networks such as Akamai, such as Google, Netflix, Apple etc).
Connection is Always on, MTU is 1500. Everything else off, and IPv6 hopefully eventually.
I didn't go for the plusnet router and use my own ASUS RT-AC68U instead
