Yesterday everything was fine, Speedtests were getting me around 75Mbps down, 18 up and around 15ms pings to bbc.co.uk.
Today it has gotten a bit worse, my pings have increased to around 30ms and my speeds are around 70/18.
Also when looking at stats of other folks in this thread, my max rates seem crazy high compared to theirs, what is that about?

Less than a day with the HG612.
I installed the modem around 17:00 yesterday and it was fine to start off with, this morning the speeds have decreased.
The HH5 was in for about 2 weeks with inconsistent speeds, but unfortunately I have been away for a week since the install and have not had the chance to monitor it properly.
Before I left and yesterday when I did a speed test with the HH5, it was similar as when I first used the HG612, 15ms pings and 75ish down.

Are those statistics from "yesterday" or "today" (whichever days you were talking about)? Do you have equivalent output from the other day? Which modem was plugged in "yesterday" and "today"?
On the statistics you give us:
DLM has most certainly intervened on your line, setting INP of 3 symbols both upstream and downstream, and setting "delay" to 6ms downstream and 5ms upstream. This has activated FEC and interleaving.
FEC protection is using 25% of your downstream bandwidth and 32% of your upstream bandwidth. The combination of interleaving delays will add 11ms to all you ping times.
The "usual" setting for DLM intervention downstream is for 3 symbols and 8ms, while upstream rarely gets any intervention.
I'd say DLM is trying to balance between the two with those settings, and setting a lower-than-normal "delay" for the downstream. The downside of that is that to achieve 3 symbols of INP protection, the modem has to use a lot of bandwidth. As a comparison, 3 symbols and 8ms would general result in just under 20% bandwidth overhead.
From the way DLM has intervened, your line looks to be being badly affected by noise. Unfortunately, the statistics don't cover a very long period to show this.

Two things that combine:
1. You are close to the cabinet. Your downstream attenuation values of 5.4dB, 11.7dB and 19.7dB are pretty low.
Mine are 11.3dB, 27.1dB and 41.3dB with a cable distance of 350-400m, giving attainable values of 82/25; you must be considerably closer - within 200m would be my guess.
2. When FEC/interleaving is turned on, and actual speed goes down, something funny happens to the max attainable value: it goes up - usually by about the same amount as the actual speed goes down (this rule-of-thumb is seen downstream; intervention upstream is so rare that I don't think I could say what happens there)
That rule-of-thumb suggests your real downstream attainable value, if FEC/interleaving were removed, would be around 100.

I'm not making myself very clear, I apologize.
Basically, yesterday when I got home, I did a quick speedtest and ping on the HH5 where I got 75/18ish and 15ms pings to bbc.co.uk.
I switched out the HH5 to the combo in my signature (HG612 and WR1043) and the speeds were pretty much the same as on the HH5 yesterday.
Today, when I got up this morning, and the time of posting this, the speeds have dropped considerably to 70/18ish and pings are 26 - 30ms.
Unfortunately, I didn't save any stats from the modem yesterday, but the stats I posted above are from today. I also did the driver update today which didn't improve or even worsen the speeds.
It looks like there could be an issue with the HG612 i'm using.
EDIT: Saying that, my speeds and pings have been more consistent, sometimes when I did tests from the HH5 it would randomly get low speeds around 20meg.

So my pings are pretty much the same, they aren't bad I guess, but they are worse than they used to be.

Not sure what to think or do to be honest. I could put the HH5 back, and have reduced pings with all over the place speed, or stay as I am now with half decent speed and higher pings.
Would contacting BT about my issues be worth a try?

Yeah, good idea. Ill give it a few days then before I start whining again.
Is it possible that all the resets and messing around with firmware on the modem could have triggered DLM to add interleaving? As I said, it was fine to start off with.

Yes, DLM is interested in errors and disconnections. It takes about 10 days to remove interleaving once added, as long as the errors and disconnections have ceased.
But it may be longer - 2-4 weeks even.
