I have used Draytek Routers for over a decade and they are pretty bullet proof. As you'll have seen from the WebGUI there is an overwhelming number of configuration options. Some of those to consider tinkering with is:
Turning off Band Steering to ensure you're connected to the 5GHz band.
In the General Setup for the 5Ghz band ensure you're on a channel that is not crowded and stick to channel 52 or lower to avoid the DFS radar scanning checks. Use a tool like WiFi Explorer or equivalent to discover local spectrum usage of neighbouring WiFi networks. Set the Radio Mode to Mixed to ensure 802.11ac is enabled.
In Advanced settings, switch to Green Field Mode, 20/40/80 Channel bandwidth, set TX power to 30%, enable WMM and change the country code to UK (assuming you live in the UK).
Run your tests again. If you can, use an end to end network performance tool called iPerf3 for testing. There are clients for all platforms including iOS and Android that you can use to test end to end performance. If you're a dab hand with Docker, pull and run a Container for Open Speed Test which is another simple LAN speed test tool.
