Ditto. I'd also change iTunes account fully. You still know the u/n & p/w for the stuff you've bought already, and can enter that info if/when required.
I think your best bet is to tell Santander that you will take them to small claims court.
If you can produce good enough evidence you would win, and they know it.

But if you change the card details it verifies them and then refuses the change. Now you can enter an invalid billing address, but I'd still rather my details weren't in there.
Santander are p**s poor when it comes to fraud. I had a similar issue.
I had to request esclation and reminded them that they have duty of care to secure my funds and I had never authorised such transactions regardless of how it was done and who the retailer was.
Unfortunately it takes reminding them that your not a mug and you know what you're on about for them to give in!
