Oh yes - trash does get emptied periodically - via Finder . I found it surprising how much got in there and how big it got.

I think my main problem is photos and music

If you backup your phones and iPads to the Mac, check out the backup folder. Not at the computer atm but I deleted my old backups and got back a lot of space. In fact I moved the backup to another hd off my ssd on my Mac pro. There's a guide online if you do a search.
