I had my local 5G mast go down according to my ZTE MC801 - contact Three, they said no issues and then later found out they were doing 'network upgrades' until a week later and three days later my local mast was online. It had a strange behaviour of being down from 9am and be back on by 4pm until the network upgrades had finished. Though looking at coverage checker it does seem my 5G coverage has increased because of this.
However, during this time my mates on EE were also down and so was Vodafone - it was a backhaul issue for both Openreach and VM backhaul. Also, Three's upgraded 5G masts rely on a 10gbps VM backhaul and if the VM network has issues - unfortunately, your mast will also have issues.
It's likely you have a network disruption due to upgrades in your area. When my local mast was down, I connected from my 0.4mi mast to a 2.0mi mast over 4G and it was literally unusable with speeds in the kbps.
Btw, I've tested the Huawei CPE Pro 2 before in my local network and found that the Huawei Balong modem would disconnect randomly every hour or so to band steer to a different band (three managing congestion by kicking users of certain bands, but this would be annoying if you were in the middle of VOIP or in game or streaming) - with the Snapdragon X55 modem on my ZTE, it was rock solid.
I know in the ZTE you can get the band details in the web management and the cell id and compare it in cellmapper to see which mast you are connected to - it's likely to be a further away mast until network upgrades are complete. I think there's a Huawei tool that can do it as well not too sure what it is called now...
