I think Amazon have or are changing the names, so the "Kindle Fire" tablets are becoming just "Fire" to separate out from the Kindle e-ink book readers.
From searching it seems the Qualcomm MDM9x25 is in the Fire HDX, and this is a Category 4 device, same as the iPhone 6 / 6+ and iPad Air 2.

Some users on digital spy (in more remote locations) are reporting 100+ megabit speeds on the EE 100gb SIM !!
Those speeds of yours are surely LTE, but your Samsung S II only has a 21megabit max HSPA+ modem, with real world speeds around 15mbps max. The HDX will support LTE (4G) and all the lower speeds which includes DC-HSPA 42megabit (around 30 seen in real world).
