Another option is get an n100 fanless mini pc from ali express. I have one here which I used with pfsense before my dm pro se.
It has 4 x 2.5gb intel lan ports which is ideal for wan connection and one out to a 2.5gb switch. 16gb ram and 256 nvme for storage. Paid about £160 for it. It had no trouble with you fibre 2gb/2gb

I had an Ubiquiti UDM-Pro with a 10Gbit SFP that would run at 2.5Gbit, albeit in a non-supported mode and whilst functionally it was good, the software could be extremely unstable with what appeared to a severe lack of quality control or testing before it was released.

I've since moved to the Asus TUF Gaming AX6000 and whilst it doesn't have quite the wealth of functionality and has an annoying habit of rebooting to apply any changes it actually works really well and does "enough" of what I need it for.

did you ever update any of the units firmware..... ?

OP's requirement was specifically at least 2 x 2.5G ports, so the 2962 fails.

The 3912 meets that requirement but is madly expensive.

Have a look at the newly announced Ubiquiti UXG-Max

2.5Gb WAN and 4x2.5Gb LAN ports

Although if you fully implement IDS & IPS it may drop to about 1.5 Gb throughput apparently

Thanks all.

Most of the options are past the £99 i could pay to Yayzi for their router so I may just go with that option.

I plan on upgrading my PC later this year if I can so I may keep my old parts and make a server out of it that can run pfsense, be a nas, etc.

There are better more energy efficient options available today so might be an option to sell what you can and look at alternatives.

The router they provide is a nice TP-Link model, I have put a link below.
It is not available to buy yet but I can pre order from a wholesaler and costs me more than £99
I'd just stick with this if it meets your needs

Indeed, I currently us a Archer AX3000 and the wifi on that is slower than the ex820!

my current PC is still quite powerful and would make a good server as well as good back up parts if needed.

AMD Ryzen 7 5800X3D with 64Gb of ram. I am not worried about energy efficiency as once these parts are in a server role the system as a whole will use around 170w and I undervolt the CPU as it is.
