Very rare to see over 1Meg on Sky LLU ADSL2+ they tend to be conservative with upstream speeds

They do not do Annex M at all

This is untrue. If you get the broadband, plug it in, leave in plugged in for 10 days as advised then the default is 1.1 Mbps upload (this is nowadays). It wasn't this was a year or so ago...

If you ring up and ask them to 'uncap the line' or ask sky to tweak the line in ANY way, the default becomes around 765 Kbps (0.7 Mbps) unless you are on an over 18 Mbps speed.

If you just get SKY Broadband and do nothing you will see 1.1 Mbps upload. Unless it's totally unstable.
The automatic system (DLM) can also set speeds that give a 3db noise margin nowadays too

You probably signed up over 12 months ago when DLM was slightly different.

Also I mean that Sky are no longer conservative with upload speeds. They are pretty standard now.
Sky do not do annex M. Excuse me that was a mis quote.

Before I moved to Sky fibre my upload speed on their ADSL2+ service was 12 Mbps down and 1.1 Mbps up.

Am I right in thinking that sky only offer a 6db line profile?

I want to get the maximum possible out of my line as fibre is unlikely to come for ages yet.

Noise margin (Down/Up): 6.4 dB / 27.0 dB
Line attenuation (Down/Up): 35.2 dB / 22.5 dB
Output power (Down/Up): 19.9 dBm / 12.5 dBm

Do you think I will be able to get better speeds with sky or bethere/talktalk as they allow lower profiles?

Balance would suggest slightly faster on TalkTalk, and a fair bit faster on Be.

All depends on how stable your noise margin is at night once you start using the extra frequencies from ADSL2+. Until you try you cannot tell.

Any estimates a provider gives you at sign up is an estimate, and should be treated with the same respect as you would do a weather forecast that says it is going to be warm and sunny on November 5th.
