Some IT departments push out Windows updates over VPN connections so its best to turn off (not sleep) your device as the network connectivity could still be active

Were any of your devices disconnected/powered off between 02:30 and 03:30 today (01/12/2020)? That time period your graph looks perfectly normal.

Thanks for all replies.
Following suggestions of a device causing the issue
I turned off the wifi overnight and the graph looks normal. Over that period. Until it got switched on again. Must be a wifi device causing the spikes
