I've known for sometime that if you delete emails, junk etc that the size of the Outlook.pst file does not change its size until you compact it. Therefore you can end up with a lot of empty space.
Since Saturday afternoon I ran "Compact Now" located within Data File Management and slowly the .pst file was compacted. Also I deleted many many defuct emails etc. All in all, managed to halve the size of Outlook.pst Additionally ran SCANPST.EXE to Repair the PST file.
Stability has greatly improved and my next task is to further prune out rubbish and also rearrange PST files for future storage etc.
