Every now and then I will have to reconfigure my parents PC because Microsoft “forced” them into changing the browser default.

I honestly don't believe MS forced your parents into using Edge maybe you could post link to a screenshot when this occurs.

I have been using Win 10 with Firefox for years and while some MS Apps do open Edge and maybe ask if you want to change to Edge as your DEFAULT browser I've never seen them trying to force me. It's also like everyone has Google Chrome on their computer because a lot of downloaded software has a checkbox which is ticked by default asking if you would like to install.

To get back on point, as well as the above neither does MS NAG me to change to Edge.

oh dear, that is not good, I have just reinstalled Windows 10 on my PC as I was having a few problems, but not the latest version.

Whilst possible, it can cause problems with other applications.
Use caution if you do this, backup system first.

Hence my use of “quotes” but the language used was certainly more heavy handed in encouraging them to change to Edge. This is not exactly new behaviour from MS.

I've been happy enough to use MS Edge on Windows 10 for a long while now. I must have received a recent 'nag' not to use Internet Explorer as it was no longer supported. Unnecessary as I didn't use it. Edge works for me. OK, I uninstalled IE. BIG MISTAKE!
I use MS Outlook 2010 as my email client. Now I find I cannot follow links in emails received (potentially dodgy, I know) Instead I get the message: "The operation is canceled due to restrictions in effect on this computer..."
Sometimes the link can be cut and pasted into my browser, sometimes the URL is not easily cuttable, such as Amazon's 'Track your package' button, and I have to forward the email to another device.
The promising "solutions" I've found on the internet do not work. It is no longer possible to reinstall IE. Repairing Outlook from the CD does not work.
Please, has anyone any workable solutions?

Did you try this one? If that doesn’t work you may have to reinstall Win10

Have you seen this. You may be able to upgrade to the new Outlook Windows app for free?
