Are there any benfits or drawbacks in retaining my Youfibre Eero Pro 6 router and using it in Passthrough mode behind my VPN router which is a GL-AX1800 / Flint or would it be best to just use my GL-AX1800 on its own!!!!

No don't do that, you're just adding an extra device for no reason, connect your router directly up to the ONT

I connected the GL-AX1800 dierctly to the ONT and it works fine, the Youfibre router remains in its box
