How are you getting on with idnet?
I'm also from N.Ireland and I'm interested in switching from fttp BT, specially for better pings/gaming.

So far so good.

My pings to 1.1.1.1 are usually 16ms, although sometimes after a reboot / reconnect they can go up to 22ms.

This seems to be a known issue with IDnet and other ISPs who utilise Zen's backhaul which appears to occasionally induce additional latency. One of Zen's gateways results in a few extra hops, so if you're connected to it, you can expect an additional ~5ms.

It's a simple fix - just reconnect your WAN / bounce your WAN interface a few times until pings drop.

It actually is not just occasionally it unfortunately is a possibility whenever you reconnect; of course home routers will reconnect silently so this could just look to happen for no reason.

Completely boils down to where in the country your connection gets routed to, and as you noticed the solution is to just bounce the connection until it works.
