Viurtalmin was being a bit picky about the os version of ubuntu windows installed so instead i have just spun up a 2nd smaller ubuntu 20.04 to run webmin for me. Websites back up and running.

I want to get email to work but that looks like a right can of worms to get working

Viurtalmin is very picky on OSs, go with the list on the website. Email in Viurtalmin is ever so slightly strange compared to say cpanel.
